I agree, I have even stopped buying pre-shredded cheese. It doesn't even melt correctly when making a pizza or some cheese bread. So I buy a good quality chunk of cheese and shred it myself. I think some brands add some clumping agent to their shredded cheese to keep it from becoming a ball of cheese in the fridge. I have a shredding blade for my food processor if I need to make a lot of shredded cheese and I also use it to shred potatoes for hash browns.Sometimes the shredded cheeses are better with the name brands than the store brand kind.
